Mormora Coffee Plantation is located in the Oromia Regional state, Guji Zone, and Shakisso woreda (and in this case, town). For reference, Shakisso town is 500 km south of Addis Ababa and Mormora Estate is located at a distance of 20 km from Shakisso town.
Mormora Natural Process
After a selective picking of red cherries, the cherries arespread on African raised bedswithin 6 - 8 hours after harvestto prevent fermentation. The thickness of the cherries on the beds is kept between 2-4 cm to ensure even drying.
Once spread, the cherries are turned a minimum of two times per an hour during which time the staff remove unripened, insect damaged, overripenend cherries and other materials. The total drying period is from two to three weeks, depending on weather conditions and the coffee is covered with plastic sheeting during rainy periods and during the nighttimes.
